Gran's Fruit Cake
3/4 lb plain flour, 1 teaspoon baking powder, 7 ozs. butter, 6 ozs. sultanas, 8 ozs. currants, 2 ozs. mixed peel, 1 oz. ground almonds, 5 ozs. sugar, 3 eggs, milk if required, 1 oz. chopped almonds.
Work the butter and sugar with a wooden spoon to a smooth cream, beat the eggs and then add them to the mixture, continue beating until the mixture is smooth.
Add the baking powder to the flower and then gradually sift into the mix while constantly stirring, add the ground almonds and fruit.
Beat well and add milk as required to create a mix that will just flow - this may take some practice to perfect.
Place the mix in a tin that has been lined with greaseproof paper, blanch and split the almonds and place on top.
Bake in a moderate oven for about 1 hour 45 minutes, when cake is sufficiently brown, cover with greaseproof paper and lessen the heat.
